Gluten Free and Low Carb this is a delicious crispy pancake!
1 Large Cauliflower
2 Large Eggs
125 ml Grated Cheddar Cheese
125 ml Almond Flour
2.5 ml Cayenne Pepper
Extra Virgin Olive Oil
Some salt and pepper to taste
Cook the cauliflower until soft. (I steam mine for 10 minutes in the microwave oven.) Let it cool down.
The next step is very important: PUT THE CAULIFLOWER IN A TEA CLOTH AND DRAIN ALL THE EXCESS FLUID OUT WITH YOUR HANDS UNTIL THE CAULIFLOWER IS A PUTTY TEXTURE.
Beat the eggs and add the rest of the ingredients to the cauliflower and mix thoroughly.
Heat a non-stick frying pan and lightly oil the pan. Add spoonfuls to the heated pan and fry the cauliflower pancakes until they are nice and crispy. Serve as is, or serve as a veggie option with your meal.
